Spice 75 cocktail in a Champagne Flute

Spice 75

Rum Cocktail Alcoholic

🥃 Serve in: Champagne Flute

Rum stands in for gin here in this French 75 riff, with allspice and sugar building real spiced complexity beneath the usual lime juice and Champagne top. That allspice gives it a warmth the citrus-and-bubbles format doesn't normally carry. Bright, spiced, and genuinely celebratory, garnished with an orange spiral and served in a wine glass.

Ingredients

Instructions

Gently warm 60g golden caster sugar in a pan with 30ml water and 1 tbsp allspice. Cook gently until the sugar has dissolved, then leave the mixture to cool. Strain through a sieve lined with a coffee filter (or a double layer of kitchen paper). Pour 60ml of the spiced syrup into a cocktail shaker along with 200ml rum and 90ml lime juice. Shake with ice and strain between six flute glasses. Top up with 600ml champagne and garnish each with an orange twist.
