Gin, lemon, and sugar get topped with a good pour of soda water for a light, bubbly finish -- the fizz format's been doing this since the 1870s and it still holds up. It's the entry-level version of a much bigger family; the Ramos Gin Fizz down the road adds cream, egg white, and orange flower water for something far more involved. This one keeps it simple: bright, cold, and built for a hot afternoon.
