Dubonnet Rouge's wine-and-quinine sweetness gets stirred with gin and a dash of bitters, finished with a lemon peel -- lower-proof and more herbal than a Martini, and built specifically to open up an appetite before dinner rather than close one out after. Reportedly a favorite of Queen Elizabeth II, which gives it a certain old-world credibility most aperitifs can't claim. A solid first stop for anyone who's never tried Dubonnet on its own.
Stir all ingredients (except lemon peel) with ice and strain into a cocktail glass. Add the twist of lemon peel and serve.
