A vivid, sky-blue tiki-style sour that shakes white rum with amaretto, blue curaçao, pineapple juice, and a splash of lime, then gets served over crushed ice. It was invented by bartender Mario Batugo of Tip's Restaurant in Santa Clarita, California, who won the U.S. Bartenders' Guild's 1981 national competition with it — edging out an entry from his own uncle and mentor, celebrated mixologist Bobby Batugo. The almond sweetness of the amaretto plays against tart pineapple and lime, while the curaçao does the visual work, turning the drink a bright, cloudless blue. A fun, competition-pedigreed entry in the blue-cocktail family alongside the Blue Hawaii and Blue Lagoon.

Instructions

Fill a shaker two-thirds with ice and add the rum, blue curaçao, Amaretto, pineapple juice and lime juice. Shake until chilled. Pour into a highball glass half filled with ice.
