The Pour Bears take on the Jungle Bird, the tiki classic invented in 1978 at the Kuala Lumpur Hilton's Aviary Bar. Black rum and bracingly bitter Campari get balanced against pineapple and lime juice, served over crushed ice in a rocks glass - proof Campari's bitterness plays surprisingly well with tropical fruit. This version keeps things lean without added simple syrup, though a splash is easy to work in if you like your tiki drinks sweeter.
Place the rum, Campari, and juices in a cocktail shaker, add ice and shake vigorously. Strain into a rocks glass filled with crushed ice and garnish with pineapple chunks. Could stand some simple syrup if you like your drinks a little sweeter. Pour. Sip and Repeat.
