Cognac and gin share the base here, meeting lime cordial and lime juice, a few dashes of Angostura bitters, and a long top of spicy ginger beer -- a tiki classic reportedly invented in 1940s Cairo to cure hangovers among British and American servicemen. Its unusual gin-and-cognac combination gives it real depth beneath the ginger's spice. Strong and restorative in reputation if not always in practice, a favorite among serious tiki enthusiasts. Served over ice in a Collins glass.
Shake the cognac, gin, lime cordial, lime juice, and bitters with ice, then strain into a glass half filled with ginger beer. Top with the remaining ginger beer and garnish with pineapple, cherry, lime, and mint.
