Lime juice, sugar, and a dash of bitters get topped with soda water, then the whole thing gets stirred hard and fast with a swizzle stick until the outside of the glass frosts over. That swizzling technique comes straight out of the Caribbean, and it does double duty -- chilling and diluting the drink at the same time it builds the drink's signature frosted look. Tart and herbal, it's a warm-weather gin option that actually earns its ice.
In a shaker half-filled with ice cubes, combine the lime juice, sugar, gin, and bitters. Shake well. Almost fill a colling glass with ice cubes. Stir until the glass is frosted. Strain the mixture in the shaker into the glass and add the club soda.
