Blended Scotch meets lemon juice, honey syrup, and ginger syrup here, finished with a float of intensely peaty Islay single malt right on top. Invented at New York's Milk & Honey in the 2000s, its layered smoke, honey, and ginger have made it one of the most beloved modern Scotch cocktails going. That float lets you taste the peat separately from the sweeter base with every sip. Shaken, strained over fresh ice, then topped with the smoky finish.

Instructions

Shake blended Scotch, lemon juice, honey syrup and ginger syrup with ice. Strain over large ice in chilled rocks glass. Float smoky Scotch on top (be sure to use a smoky Scotch such as an Islay single malt). Garnish with candied ginger.
