Scotch whisky gets enriched here with a rinse of absinthe, lemon and lime juice, sugar syrup, and egg white, topped with soda water. Despite its name suggesting a breakfast drink, it was traditionally used as a hangover cure rather than a morning starter. That absinthe adds a distinctive herbal lift that sets it apart from a standard whiskey fizz. Served over ice in a highball glass.
Shake the whisky, absinthe, juices, syrup and egg white with ice, then strain the liquid back into the shaker and dry shake without ice. Slowly pour most of the mix into a chilled glass while simultaneously pouring in soda water, let it settle briefly, then top with the rest so a foam head rises. Garnish with a lime slice.
