Rum, lime juice, and sugar, shaken hard and strained until it's ice-cold and glass-clear -- three ingredients doing a lot more work than they look like they should. It's named for a Cuban mining town near Santiago de Cuba, brought home by American engineers in the early 1900s, and later claimed by Hemingway, who liked his blended, extra-boozy, and sugar-free -- a version that still carries his name. Deceptively simple, it's become the drink bartenders quietly judge each other by: get the citrus balance wrong and there's nowhere to hide.
Pour all ingredients into shaker with ice cubes. Shake well. Strain in chilled cocktail glass.
