Aged and blackstrap rum share the glass here, with falernum's warm clove-lime spice and a couple dashes of bitters built over crushed ice. The name refers to the drink's dark, viscous appearance, not anything about corn or oil actually in the glass. Rich, spiced, and unmistakably rum-forward, it's a favorite across Trinidad and the wider Caribbean -- and a genuinely good introduction to falernum for anyone who's only met it in tiki drinks.
Cut the half lime in half again. Add the lime, falernum, and bitters to a rocks glass. Muddle. Add the rum. (Aged Barbados rum such as Plantation 5 Year is recommended). Add ice and stir. Float the blackstrap rum on top. Serve with a straw.
