Grenadine and lemon juice both go into gin here, shaken hard with egg white until it turns pale pink and genuinely frothy. Named for a real Philadelphia gentlemen's club, it spent decades forgotten before the 2000s craft cocktail revival made it a poster child for the whole movement. Tart, sweet, and creamy all at once, it's widely considered one of the best gin sours ever put together.
