Oloroso and Pedro Ximenez sherries share the base here, blended with maraschino liqueur, cane syrup, and pineapple and orange juice over crushed ice -- a 19th-century American classic that helped make sherry hugely popular in its era. Once one of the most popular drinks in America, it fell into obscurity before being rediscovered by modern bartenders reviving pre-Prohibition classics. Rich, fruity, and nutty, a great showcase for sherry's versatility in cocktails. Served over crushed ice in a Collins glass, traditionally garnished with abundant fresh fruit.
Shake all ingredients with ice, then fine strain into a glass filled with crushed ice. Garnish with a pineapple wedge, orange slice, mint sprigs, and seasonal berries.
