Rum gets blended with cream of coconut and pineapple, usually served frozen or over ice with a suitably tropical garnish. Puerto Rico made it the island's official drink in the 1970s after several competing bartenders each claimed to have invented it that same decade. Sweet and dessert-like from the first sip, it became a tourist favorite fast and never really slowed down -- still shorthand for poolside relaxation wherever it's poured.
