White rum meets sugar syrup and lime juice here, with a couple dashes of bitters underneath and a top of Prosecco for real effervescence -- essentially a rum-based riff on the French 75. Invented at New York's Flatiron Lounge in the 2000s, it's become a genuinely popular modern brunch cocktail. Bright, bubbly, and citrus-forward, a great celebratory option for rum drinkers. Served up in a cocktail glass.
Shake a handful of mint, 2oz white rum, 1oz of sugar syrup, 1oz lime juice and 2 dashes angostura bitters with ice. Double strain into a glass and top with 2oz of prosecco.
