Anthony Bourdain famously called the Negroni a "Satanic delicious hell broth". Super easy to make it is equal parts gin, Campari, and sweet vermouth, stirred over ice and finished with an orange peel -- there's no ratio to argue over here, the equal-parts structure is the point. Legend has it Count Camillo Negroni asked a Florence bartender to fortify his usual Americano with gin instead of soda water in 1919, and cocktail history hasn't looked back since. Bracingly bitter with almost no sweetness to soften the landing, it's spawned more riffs than nearly any other modern classic -- the Boulevardier and the sparkling Negroni Sbagliato both owe it their existence. An aperitif for people who don't need convincing that bitter is a flavor worth chasing.
