The Pour Bears are getting soft this round. This one's a dessert wearing a cocktail's clothes — peach schnapps and lemon juice cut through a rich pour of heavy cream and vanilla syrup, landing somewhere between a boozy milkshake and a bear hug from someone who smells like peach cobbler. It's sweet, it's thick, it's a little indulgent — basically everything you want in a cub on a Friday night. Blend it hard, pour it slow, and don't pretend you're not going to want a second one.
Cut the peach into sections (8) and lay flat on parchment paper on a baking pan. Coat one side with the sugar. Then either use a cooking torch or your oven's broil feature to brulée the peaches. Take 6 of the pieces and add them to a blender with the rest of the ingredients until smooth. Pour into rocks glasses and garnish with the remaining pieces of peach. Pour the vanilla syrup over the peach and into the glass. Serves 2.
