Spiced rum meets orange curacao and lemon juice here, with a rich pour of sugar syrup and a silky egg white top, finished with a cinnamon-sugar rim. Invented at San Francisco's Starlight Room in the 1990s as an homage to the Sidecar, it swaps cognac for spiced rum for a warmer, more autumnal profile. That cinnamon rim adds a spiced aromatic note with every sip. A great modern riff for anyone who loves the Sidecar format but wants something a bit richer.
Rim a chilled coupe with cinnamon sugar. Shake all ingredients with ice, strain back into the shaker, dry shake without ice to emulsify, then fine strain into the prepared glass. Garnish with an orange zest twist.
