Scotch whisky gets set aflame here, poured in a glowing arc between two mugs before mixing with boiling water and a barspoon of sugar -- a dramatic 19th-century hot cocktail invented by legendary bartender Jerry Thomas. Originally performed as a showpiece as much as a drink, it demonstrates just how theatrical early American bartending could be. The flaming transfer aerates and slightly caramelizes the whisky, mellowing its harshness. Not a cocktail for the faint of heart or the inexperienced -- open flame is very much part of the recipe.
Warm two metal mugs with boiling water, then pour the whisky into one and fresh boiling water into the other. Carefully ignite the whisky and pour the flaming liquid back and forth between the two mugs, then smother to extinguish. Pour into glasses, stir in sugar to taste, and garnish each with a lemon zest twist. (Caution: this involves open flame; practice with water first.)
