A strong, sweet-spicy dried flower bud, used sparingly to flavor mulled or spiced drinks.

Origin

The Maluku Islands (the historic "Spice Islands") of Indonesia, one of the most fiercely contested trade goods in colonial history.

History

Cloves were, for centuries, grown almost exclusively in a small handful of Indonesian islands, making them one of the most valuable and fought-over spices in world history, driving Portuguese, Dutch, and British colonial ambitions in the region. Dried clove buds became a global kitchen staple once cultivation eventually spread beyond their original islands. In cocktails, whole cloves show up mostly in mulled and hot drinks, sometimes studded into a citrus garnish, contributing to the same warm baking-spice family as cinnamon and allspice.

Intensely warm, sweet, and slightly numbing, with a strong aromatic punch even in small amounts.

Tasting notes

A little goes a long way: cloves bring an assertive, almost medicinal warmth and a faint numbing sensation on the tongue, which is why they're typically used whole (studded into citrus or steeped briefly) rather than ground directly into a drink.
