Red wine gets gently warmed -- never boiled -- with sugar, cinnamon, cloves, and lemon peel until it turns into the spiced holiday tradition that fills Christmas markets across Germany and Central Europe. Warming and aromatic by design, it's built entirely around cold weather and good company. Served hot, mug in hand.
Boil sugar and spices in water, leave in the water for 30 minutes. Strain the spiced water and mix with the wine. Heat slowly until short of boiling temperature. (To remove alcohol, let it boil for a while.) You may add lemon or orange juice to taste. Serve in irish coffee cup.
