Tequila, orange liqueur, and lime juice, balanced tight and served in a salt-rimmed glass -- a formula so good that bartenders on both sides of the US-Mexico border have been claiming credit for inventing it since the 1930s. Nobody's settled that argument, but it hardly matters: by the mid-1900s this had become tequila's calling card, spinning off everything from frozen blender versions to fruit-loaded riffs. Shaken over ice or blended into slush, the citrus-and-salt balance is why it's one of the most-ordered cocktails on the planet.
Rub the rim of the glass with the lime slice to make the salt stick to it. Take care to moisten only the outer rim and sprinkle the salt on it. The salt should present to the lips of the imbiber and never mix into the cocktail. Shake the other ingredients with ice, then carefully pour into the glass.
