Irish whiskey and sugar stir into hot coffee, then a float of lightly whipped cream sits on top rather than getting mixed in -- the whole trick is keeping that cream layer intact so each sip hits cold cream before hot, boozy coffee underneath. It was dreamed up in the 1940s at Ireland's Foynes Airbase to warm up exhausted transatlantic passengers, and it's been doing the same job at bars everywhere since.
Heat the coffee, whiskey and sugar; do not boil. Pour into glass and top with cream; serve hot.
