Lime and sugar get muddled directly into cachaca -- Brazil's grassy, funky sugarcane spirit -- then the whole thing goes over crushed ice with nothing else added. Three ingredients, no shortcuts: the entire drink lives or dies on how well the lime gets muddled, since over-work the pith and you've ruined it with bitterness. Cachaca's rougher, more vegetal character is what keeps this from tasting like a rum drink in disguise. Brazil's national cocktail, and one of the great arguments for restraint.
Place lime and sugar into old fashioned glass and muddle (mash the two ingredients together using a muddler or a wooden spoon). Fill the glass with ice and add the Cachaça.
