The Bicicletta is proof that a great cocktail doesn't need to be complicated: bitter Campari, crisp dry white wine, and a splash of soda, built simply over ice. It's been a staple in Veneto's bars for decades, long before the rest of the world caught on — the name means "bicycle," supposedly because it's light enough to let regulars pedal home afterward. Low-proof, bright, and bitter-forward, it's the kind of aperitivo built for slow afternoons, not last call.
Ingredients
- White wine3 oz
- Campari2 oz
- Club Soda2 oz
- Orange Slicegarnish
Instructions
You build it in the rocks glass over ice. The Campari can be replaced with Aperol, but we prefer Campari. Do not garnish with lemon. Garnish with an orange or nothing at all.
