Lime Cordial
A sweetened, concentrated lime juice product (Rose's is the classic brand), used in place of fresh lime juice and sugar - essential to a proper Gimlet.
Origin
Scotland, patented in 1867 by Lauchlin Rose as a way to preserve lime juice without alcohol, best known through the Rose's brand.
History
Lauchlin Rose patented a sugar-based method for preserving citrus juice without alcohol in 1867, a genuine innovation at a time when spirits were the standard preservative for shipboard citrus, and launched his factory in Leith, Scotland the following year. His timing coincided with Britain's 1867 Merchant Shipping Act, which required British ships to carry lime juice to prevent scurvy, and Rose's lime cordial quickly became a naval staple, sourcing much of its fruit from plantations Rose purchased in Dominica. It became inseparable from one classic cocktail in particular, the Gimlet, whose defining ratio of gin to Rose's lime cordial dates back to at least the early 20th century.
Flavor profile
Intensely sweet-tart lime flavor, syrupy and concentrated rather than fresh-tasting.
Tasting notes
A distinctly sweetened, slightly cooked-tasting lime flavor quite different from fresh lime juice, essential to a classic Gimlet's specific character - substituting fresh lime juice and simple syrup produces a noticeably different, brighter drink than the original recipe intended.
Substitutes
- Fresh lime juice with simple syrup, for a fresher but noticeably different substitute (not a true Gimlet replica).
- A different bottled lime cordial brand, since Rose's largely defines the category's expected flavor.
- Homemade lime cordial (lime juice, zest, and sugar cooked together), for a more from-scratch approximation.
