History

Frozen fruit ices have roots stretching back to ancient Persian and Middle Eastern sherbets, later refined into Italian sorbetto and French sorbet through the Renaissance and beyond. Lemon sorbet's move into cocktails is a modern development, used as both a frozen, blended cocktail base and a playful float or garnish, most notably in variations on the Italian classic that pairs it with prosecco for a not-quite-frozen, not-quite-liquid drink.
