A natural sweetener made by bees, adding floral sweetness and body to cocktails.

Origin

Wherever bees are kept; honey is one of the oldest sweeteners known to humans, with evidence of its use dating back tens of thousands of years.

History

Honey predates refined sugar by thousands of years as humanity's primary sweetener, gathered from wild hives long before organized beekeeping developed in ancient Egypt and elsewhere. Its use in fermented and mixed drinks is ancient too, from mead (fermented honey wine, among the oldest alcoholic beverages known) to its modern cocktail role, where its floral complexity and thick body distinguish it clearly from a neutral sugar syrup.

Rich and floral, with a complexity and depth that varies significantly by the flowers bees foraged from.

Tasting notes

Far more complex than plain sugar, honey brings floral, sometimes fruity or earthy notes depending on its source (clover honey is mild and light, buckwheat honey is dark and robust), adding real character to a drink beyond simple sweetness.
