White Balsamic Vinegar

A lighter, milder balsamic vinegar made without caramel coloring, occasionally used in savory or shrub-style cocktails for tangy acidity.

Origin

Modena, Italy, a lighter-colored variation on traditional dark balsamic vinegar, developed to avoid darkening lighter dishes while still offering balsamic's characteristic sweet-tart flavor.

History

White balsamic vinegar follows the same Modena tradition as dark balsamic, made from grape must, but is cooked at a lower temperature and aged in lighter-colored barrels to avoid the deep caramelization that gives traditional balsamic its dark color, making it useful in dishes (and drinks) where a dark color would be unwelcome. Its cocktail use is a fairly recent, niche development within the broader savory and vinegar-forward "shrub" cocktail trend, offering acidity and mild sweetness without balsamic's characteristic dark hue or heavier, more caramelized flavor.
